SQLServer String column type should be NVARCHAR to support non-latin characters

Description

SQLServer uses VARCHAR as it's limited-length string type, which is restricted to an 8-bit codepage under most collations.

Somewhat bafflingly it uses the deprecated NTEXT type for unlimited length text columns, which could be use as a pretty terrible workaround.

Ideally it should be using NVARCHAR for limited-length and NVARCHAR(max) for unlimited-length text fields.
